Salut! I just want to drop one small comment for you as I’ve been in that boat before. I myself traveled Aussie amongst many other countries, also lived in NZ twice (here currently). There’s not one week that goes by in the last few years where I don’t wish I had stayed in Australia. It’s too late for me now (can’t get residency). I know France pretty well, and Europe in general. Step back for a moment and try to project yourself in the future, or better yet, holiday back in France for a while and try to think about it for a while. All I’m saying is that Australia, really, is an incredibly great place to live in.

Come to Europe for holidays, else there’s really no reason at all to nuke your current life and go through 10+ years of integration effort which might be for nothing in the end.
